Recipes with Sugarhill Vinegars
Generic salad dressing
6 T. Extra-virgin olive oil
3 T. herbal vinegar
1 t. dry mustard
1 clove garlic, pressed
1 t. chopped shallots or chives or onions
2 or more T. chopped fresh herbs (optional)
freshly ground black pepper, salt to taste
Mix together in a jar, shake well to blend.
Honey Dijon Dressing
1 T. dijon mustard
3 T. vinegar (chive blossom, tarragon, cilantro)
1/2 t. salt
1 T. honey
black pepper
Blend above ingredients. Add 1/2 cup olive oil while beating with a fork until creamy.
Gorgonzola & Walnut Salad Dressing
1/2 c. olive oil
4 T. Red Raspberry Vinegar
1/2 t. salt
1/4 c. toasted, chopped walnuts
1/4 c. chopped gorgonzola or blue cheese
freshly ground pepper
Blend all ingredients with a fork until creamy.
Ginger-Maple Salad Dressing
1 T. maple syrup
1 T. soy sauce
3 T. vinegar (Rosemary or Tarragon-other varieties work)
1/2 T. chopped fresh ginger
freshly ground pepper
1/2 c. oil
Blend first 5 ingredients. Whisk in oil until creamy.
Generic marinade for meats, poultry, and seafood.
(For about 4 lbs. of meat)
3/4 cup Sugarhill herbal vinegar
1/4 cup oil
1/4 cup water
1 T. brown sugar
1/2 t. salt
freshly ground pepper
Recipe for Vegetables
(green beans, squash, broccoli, corn, carrots, etc.)
Top with a tablespoon or two of vinegar instead of butter.
Try carrots with 1 T. vinegar, 1 T. honey and 1 t. chopped fresh herbs-rosemary or marjoram are excellent (if available).
Sauces
Herbal vinegar adds brightness and energy to spaghetti and white sauces. Try a tablespoon or two-it also cuts back on the need for salt!
